JaktRx Banana Coconut Crêpes

Oh the comfort of crepes.  I’ve played around with different gluten free recipes but none seem to quite match up to the deliciousness of l’Érablière du Lac-Beauport’s traditional wheat-filled version.  However, the recipe below offers a version that can actually compete in the same universe as the true Québecois variety.

JaktRX’s vanilla whey protein powder acts like a flour substitute and doesn’t make the crêpes tough like a lot of protein supplements tend to do.  This recipe is super easy to make and super duper delicious to eat, plus it’ll grow your muscles!

JaktRX Banana Coconut Crêpes

2 scoops JaktRX whey protein powder, Vern’s Vanilla Ice Cream flavour
6 eggs
1 tbsp unsweetened, shredded coconut
1 tbsp flax meal
1 tbsp almond oil
pinch of salt

Beat eggs, add flax and coconut.  Mash in bananas.  Gently fold in protein powder, then add almond oil.  Don’t over mix.

Fry in non-stick pan with oil of choice.  Top with almond butter and/or maple syrup.  EAT!
