Banana Vanilla Pancakes with Blueberry Compote

Oh the comfort one feels in making a big batch of delicious pancakes!  But oh the discomfort one feels after gobbling up said batch of delicious, puffy white wheat pancakes!

But wait, it doesn’t have to be like this.  With the ever increasing popularity of wheat flour alternatives comes a whole new world of satisfying yet not belly ache-inducing pancake opportunities – I’m not talking about those weird, gummy pre-made, gluten-free pancake mixes though.

Here’s a straightforward, Paleo and gluten-free recipe for Banana Vanilla Pancakes that I’ve adapted from the extremely wonderful PaleOMG.

Banana Vanilla Pancakes with Blueberry Compote

For pancakes:

  • 2 bananas
  • 2 eggs
  • 1 egg white
  • 1 heaping tsp flax meal
  • 1/2 cup almond milk
  • 3 tbsp coconut flour
  • 1 + 1/2 tsp pure vanilla extract
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 1-2 tbsp coconut oil for pan

For blueberry compote:

  • 1 package of fresh blueberries
  • 1 cup water
  • 1 tsp honey

To start, place blueberries and water in a small saucepan and bring to a boil.  Then reduce heat and let simmer while you make the pancakes.  Once mix has come to a boil, stir in honey.  You want this to get to a fairly thick, syrup-y consistency by the end.

Add bananas and eggs in a medium-sized bowl and puree with hand mixer (or food processor).

Add in flax meal, coconut flour, vanilla extract, baking soda, and cinnamon.  Once mixed then add in almond milk.



Heat small amount of coconut oil in a large non-stick pan over medium-high heat.

Pour in pancake batter, making each pancake about 3 inches in diameter – they’ll be harder to flip if you make them any bigger.

Flip pancake once bubbles start forming on top, beginning by loosening the outer edges of the pancake with a spatula (in order not to rip!).
