Quinoa Glory Bowl
After the [made-up] Family Day holiday, I came home from a cold day skiing at Tremblant with no groceries in the house and very little imagination.
I threw together what few vegetables I had in the fridge, cooked some quinoa and added the Glory Bowl dressing. Using this dressing on anything is almost cheating because it can make literally anything taste good.
This recipe is a cheap imitation of the almighty Glory Bowl but hey, who cares?
Any of the ingredients can easily be substituted if you don’t have them on hand. Other things I think might go well in here include: broccoli, cauliflower, green onions, kale, bok choy, bean sprouts, etc.
- 1.5 cups carrots, shredded
- 1.5 cups beets, shredded
- 1.5 cup celery, chopped
- 2 cups Swiss chard, sliced thin
- 1 cup sliced almonds, toasted
- 2 cups [uncooked quinoa]
- salt & pepper to taste
Cook quinoa, toss with veggies and add Glory Bowl dressing to taste… mmmmm!!
