Guilt-free pumpkin pancakes
Here is a yummy recipe for some guilt-free, gluten-free (and Paleo!) pumpkin pancakes – perfect for a lazy Sunday morning!
I’ve made this recipe replacing the pumpkin puree with mashed bananas and it’s also very good.
- 3 eggs
- 1 cup liquid egg whites
- 1 tbsp flax meal
- 1 scoop vanilla protein powder (optional – will make them less fluffy and a bit mealy)
- ½ tsp cinnamon
- ½ – ¾ cup pumpkin puree
- pinch of salt
Puree ingredients together using hand mixer.
Heat a bit of oil in a non-stick pan over medium-high heat. Reduce heat and pour in pancake mix. Cook fairly slowly, flip when you see some bubbles in top side of pancake. Cook briefly on other side, but don’t do too long or else you’ll make them tough.
Enjoy with a bit of almond butter and/or maple syrup on top!
